Our oils are produced only after a long year of work done with passion and dedication by all our members: "Antheo DOP Monti Iblei sottozona Frigintini", "Antheo" and "Gocce".

Yet we believe that the final consumer – besides the organoleptic assessment by a qualified "test panel" and the indispensable tasting assessment for the guarantee and certification in accordance with the law (Reg. CEE 2568/91) of the excellent quality of the product obtained – also appreciates the following information concerning each oil:

ANTHEO® il D.O.P.: 80% is extracted from the species "Moresca" while the remaining 20% is from the "Verdese"; it is characterized by an emerald green colour, a delicate flavour, a persistent aroma of freshly cut grass and a definite taste of artichoke. Its extraction from drupes harvested just when the olives begin to darken allowing for a full appreciation of its freshness.
It can be appreciated raw on all kinds of fish, on salads and white meats and on all delicate dishes.

ANTHEO® l’extravergine: the wise coupling of the more deeply rooted species in the territory, the "Moresca" and the "Biancolilla", offers a product with particular characteristics. Among its different features we believe important to point out its intense fruity taste with a light scent of green tomatoes; its clearly detectable density and robustness are not strong enough to "cover" the taste of the food, on the contrary they enhance it.

On the other side the GOCCE is characterized by being unblended oil from the "Moresca" species, the most traditional and secular tree since time immemorial. Rooted on the Ibleo plateau and reflecting all of its characteristics; it is indeed a delicate product, recalling floral scents, spicy and bitterish its taste does not let down the expectations, which its fruity taste promises. It’s recommended for all dishes, yet complements best fish and salads.

INFORMAZIONI UTILI

Extra virgin olive oil is known for its virtues and good qualities that enhance the culinary aspect, yet also the aspects relevant to living quality and health are interesting.

Its natural components, amongst which stands out oleic acid, have a defined function in regard to cholesterol containment, while at the same time have a positive effect on HDL proteins (the so-called “good cholesterol”); it also has nutritional and metabolic characteristics that distinguish it from other oils and make it fit for any sport activity, any diet and every health and age condition; it has innumerable beneficial effects on the organism, like reducing cholesterol levels and delaying aging.

The results of recent epidemiological surveys concerning the relation between the nature of fat substances forming the diet and the incidence of cardiovascular illnesses and arteriosclerosis highlighted the important role of olive oil in determining a low incidence of the above-mentioned pathologies among its consumers.

These results are mainly associated with the composition of olive oil fat acids, and in particular the remarkable percentage of a monounsaturated fat acid: the oleic acid, and the balanced presence of saturated and polyunsaturated fat acids. Even the presence of other minor olive oil components, like sterols, triterpenic alcohols and betacarotene has positive effects on some human body functions with beneficial healthy results.

Also important quantities of natural anti-oxidizers, like the polyphenols and the tocopherols are present in extra virgin olive oil, and they not only protect the oil from oxidation during its preservation phase, but they also inhibit the formation of free radicals that determine the ageing of the cells. Such characteristics are exclusive of extra virgin olive oil, which, therefore, is among the rare and precious vegetable oils.
